Pasta Primavera
This recipe is based on one from the Healthy Choice cookbook...
Quick to make and very good!!!!
16oz. fresh asparagus - sliced into 1" pieces
3 or 4 plum tomotoes, sliced lengthwise
2 cups fresh broccoli
1/2 cup red or yellow pepper strips
1/2 lb. fresh mushrooms, cut in half
Coarse ground black pepper
1 cup nonfat sour cream
1/2 cup shreaded carrot
8oz. Healthy Choice shreaded Cheddar Cheese
12 oz. thin spaghetti
2 tbsp. chopped green onions
Steam veggies (except carrots) until crisp-tender.
Toss in tomatoes and green onions; season to taste with pepper.
Combine sour cream, carrot and half of cheese. Toss with cooked spaghetti.
Top with veggies and remaining cheese.
For a variation:
Try using cauliflower, eggplant, or other hearty veggies.
